
Cranberry Squares
Inevitably somewhere you will be tempted by the goodies prepared for the upcoming holiday season. I believe in the addage of ‘if you can’t beat ‘em, join ‘em’; however, you can create deceptively tempting treats without the guilt to follow. Below are some great recipes to try:
Instead of the traditional ‘Rice Crispy Treats’, try these yummy bars that are ready in 30 minutes:
Ingredients:
2 cups puffed wheat
1/2 cup ground almonds (other nuts: pecans, pine nuts, walnuts)
2 tbsp ground flaxseed
1 cup whey protein powder
2 tsp pure vanilla
1/2 cup dried cranberries (or blueberries, raspberries, golden raisins, etc.)
1/2 cup pure maple syrup
1 tbsp coconut oil
2 tbsp natural peanut butter
Preparation:
Combine dry ingredients in a bowl and set aside.
Mix syrup and coconut oil in a pot. Bring to a simmer. Add vanilla and peanut butter. Remove from heat and blend mixture with a fork.
Combine wet with the dry ingredients.
Press into an oiled 8 x 8 dish or pan. Place in refrigerator to cool until solid. Cut into squares. Wrap individually and keep frozen for best results.
